The Problem
Real sourdough has 3 ingredients. The bread at your grocery store has 25.
There's no legal definition of "sourdough" in the United States. The bread at Brookshire's labeled "sourdough" can contain commercial yeast, vinegar for fake tang, dough conditioners, and preservatives. No real starter. No real fermentation.
Real sourdough is flour, water, salt, and a live culture. That's it.
In three hours on March 21, you'll learn to make it yourself — and you'll take home everything you need to keep baking.
What you'll learn
-
Mix
Learn to combine heritage grain flour, water, salt, and a live starter. Understand hydration, timing, and how to read your dough. You'll mix your first batch by hand and feel the difference heritage grains make.
-
Score
Learn how to use a bread lame and score patterns that control how your loaf expands in the oven.
-
Take Home
Leave with a full baking kit, your own live starter, recipe cards, and the confidence to bake your first loaf at home this week. Plus ongoing support.
Everything you need is included in the $100
Three hours of hands-on instruction from Angie Gillett
Heritage grain flour — enough for your first bakes at home
Your own live sourdough starter — ready to use
Banneton proofing basket

Dough scraper
Recipe cards with Angie's step-by-step process
Ongoing support
You don't need to bring anything except yourself and clothes you don't mind getting flour on.
Meet Your Instructor
Angie Gillett has baked thousands of loaves. She'll teach you everything she knows in one afternoon.
Angie bakes heritage grain sourdough every week for three Saturday farmers markets, two REKO markets, and two retail stores across east Texas. In 2025, her Jalapeno Cheddar Sourdough won first place at the Hot Pepper Festival in Palestine, TX.
She's not a celebrity chef or a YouTube baker. She's your neighbor in Quitman, Texas and she makes the best bread in East Texas. She'd love to show you how.

Frequently asked questions
Do I need any baking experience?
None at all. This class is designed for complete beginners. If you can stir a bowl, you can do this. Angie will walk you through every step from mixing your first dough to scoring your first loaf. Most of our students have never baked bread before — and they leave ready to bake at home.
What do I need to bring?
Just yourself and clothes you don't mind getting flour on and something to write with. All ingredients, tools, and equipment are provided. You'll take home a full baking kit when you leave — banneton, lame, scraper and your own live sourdough starter and a baked mini loaf for you to enjoy.
Is $100 really worth it?
The baking kit alone — banneton, lame, scraper, heritage grain flour, and live starter — would cost you $60–80 to buy separately. Add three hours of hands-on instruction from an experienced baker and ongoing support after class, and most people tell us it's the best $100 they've spent on a class.
Can I bring a friend or family member?
Absolutely. Each person needs their own ticket ($100 each) so everyone gets their own baking kit and hands-on instruction time. It's a great activity for couples, parent-teen pairs, or friends who want to learn together.
What if I can't attend after purchasing?
Event tickets are non-refundable, but we can transfer your seat to another person. Just email us at least seven days before the event and we'll make the switch. No hassle.
Will I actually be able to bake at home after this?
Yes. You'll leave with everything you need: a live starter, tools, and step-by-step recipe cards. Plus, Angie offers ongoing support — message her with questions about your first bakes. You won't be on your own after class. Most students bake their first loaf within a week.
Is parking available?
Yes — free parking is available at Fair Plaza (across the street) in Tyler, TX. The venue is easy to find and there's plenty of space.
